Easy Beef Stroganoff

When I got up this morning it looked like this

It was raining like you wouldn't believe and the creek was flooding....not as bad as it has, but...still...

as you can see it's traveling over the road....but not rolling...just up a bit...

it was cold and rainy all day....that meant a warm tasty meal...cooked with love in every bite ( yes, that is a Spongebob ripoff...lol)

enter the easy beef stroganoff...

first you need to cut up and onion....cut off the ends, cut in half, peel off the skin....try not to cry...sniff, sniff...sob...(but, before you start that...put a pot of water on to boil...for the egg noodles)

then you want to cut it cross ways....not all the way through from one end to the other....leave a bit so it doesn't fall to pieces...

then slice like you were cutting slices....and that's that...was that confusing...I swear it makes perfect sense in my head...next time I'll have someone hold the camera and take pictures while I do it...

when your water starts to boil...add your egg noodles and cook for the allotted amount of time...

melt one tablespoon of butter in a pan....

add one tablespoon of oil (any kind is fine)....I realize now, perhaps I should have used my pretty pan...instead of my old dingy one....didn't think about it at the time...oops...

(get partway through writing your post and realize you forgot to upload some of the photos....go back and add them...smack your forehead....)

add your onions and cook until not quite done....

add in one pound of ground beef.....break it up,mix well, and let cook....


I season mine with a teaspoon and a half of Cavender's but you could use 1 teaspoon of salt and 1/2 teaspoon of pepper....or whatever you like...

when the ground beef is done, drain the grease......

add one can cream of mushroom soup (but don't tell those pesky little squirrel butts who don't like mushrooms...shh, it's our secret)....eww, bad lighting again...

1 cup of sour cream....

and one cup of beef broth....I just used a bullion cube...

mix it all together and add 1/2 teaspoon of soy sauce (or not...I just like it...)

now, drain your noodles....if you haven't already...

add to the pan....


stir and serve it up with some green beans and some tasty bread....

Easy Beef Stroganoff

Ingredients

1 lb of ground beef
1 medium onion
1 tablespoon of butter
1 tablespoon of oil
1 1/2 teaspoons of seasoning (like salt and pepper)
1 can of cream of mushroom soup
1 cup (8 oz) of sour cream
1 cup of beef broth
1/2 teaspoon of soy sauce (optional)
egg noodles (I use about 1/3 of a package)

boil egg noodles according to package directions and drain. Cut up onion. Melt butter in a skillet and add oil. Cook onions until almost done. Add ground beef, seasoning and brown.  Drain fat from pan, and add soup, sour cream, and broth.  Mix well. Add soy sauce if desired. Stir in egg noodles and enjoy.
