Hominy Casserole

I threw this together last night to go with the Poppy Seed Chicken.....and the little bit I ate is gonna have to tide me over till well, whenever I can eat it again...see, I somehow crazily decided I would join in on this family weight loss get fit thing my Mom, Dad, and Sister are doing....of course, this means that all the yummy stuff I have planned to make...will get eaten by everyone but me....sigh....but I digress...

This is very simple....quick and easy to throw together....first...preheat the oven to 350....

you need 2 cans of hominy drained, 1 can of cream of mushroom soup, bacon bits, and velveeta (or the store equivalent)...yes, I said velveeta....please don't throw stones....plus it's not like I used the whole slab or anything.....(ignore the crackers...they just wanted in on the photo op)

you want about 8 oz of  the velveeta....I just cut about a quarter of the slab off....it's 32 oz.....melt it in the microwave....

throw all your ingredients in your casserole dish (I used a 8x8 ) and stir them all together....there is no set amount to the bacon bits....just however much you want....green chilies or jalapenos are good added in too...but my kids don't like those....

Pop this baby in the oven for 25 to 30 minutes at 350 degrees....

mmm....look at that cheesy goodness 

plate some up on a divided plate....for those picky eaters who don't like their food touching....and enjoy....


Hominy Casserole

 Ingredients

2 cans of hominy drained
1 can of cream of mushroom soup
8 oz of velveeta (or store brand)
real bacon bits or
(anything else you might want to throw in instead, green chilies, jalapenos, ham, etc.)

Preheat oven to 350 degrees. Melt velveeta in a bowl in the microwave. Mix together all the ingredients in a small casserole dish.  Bake for 25 to 30 minutes....

there you have it...simple, easy....and tasty (unless you are 10 and say it tastes like okra....still trying to figure that one out....LOL)
